Using the Disk Copy Utility to create disk images is not currently supported using the Blue Box in Mac OS X Server 1.x. If attempted, the server stops responding approximately halfway through the disk image creation process.
Mac OS X Server 10.x has a native version of Disk Copy, and therefore is not affected by this issue.
