When the magnification level is above 200%, MacDraw Pro automatically displays gradients in the Fast Display mode.
This is true even if Fast Display of Gradients is unchecked in Preferences. This is done for performance reasons. There is no way to disable this feature. As a workaround, you could scale the gradient-filled object larger, thus allowing an enlarged view while the document is at 200% or less magnification.
