This information is covered in the "Setting Up Your NetBoot Server" section of the Mac OS X Server Install Manual. Choosing between Peer or Gateway depends on the configuration of your network. For example, a network administrator might want to connect both the Mac OS X Server and the NetBoot clients directly to a router on a single subnet. In this configuration, the administrator would choose Peer in the NetBoot Server Setup Assistant because the Server is Peer of the NetBoot clients.
